Let's get COOKing!

  1. Prep all your ingredients.

  • Get your chicken thighs, cut into 1 inch pieces and put in a bowlwith curry powder, 2 tbs oil and tony Chachere's. Let sit for 20 Min

  • Mince Garlic and Ginger

  • Small Dice Onion, Potatoes, and Carrots

  • Get your Chicken stock and bring to a simmer, add in your chilies to steep

  1. In Stock pot or Rondeau (Deep Sauce Pan) on med heat. Add in oil and saute carrots, potatoes and onions. Sautee for approx min and then add in ginger and garlic

  2. Once they are fragrant add in, salt, pepper, and red pepper flakes and saute for 1 min. Remove from pan.

  3. Once removed get your pan up to heat, and add in your chicken and get color on all side. Approx 45 seconds per side. Remove them from the heat leaving all of the little flavor bits at the bottom of the pan

  1. To the oil add in 1 Tbs of curry powder and cook for 1 min. You want to practically boil the curry powder in the oil. we have to cook it to get it to release its flavors.

  2. Bring down to med low, add in 1/3 cup of oil, and 1/4 cup of flour. This will help create our Roux. Mix these together until there are no more clumps.

  3. Add in your stock, 1 cup at a time, while whisking the mixture. If you add it all in at once you will create a clumpy, weird sauce.

  4. Once everything become homogeneous, add in you charcoal powder, chicken and veggies. Let this simmer for 20 min. At this time you should begins making rice. ( If you want it darker add in more charcoal, if you want it thicker amake and add in more roux)

  5. Taste to see if you need to adjust seasoning. Then add your garnishes and you are done.

  6. Enjoy Your Hard Work

Now, here's the plot twist – one brave soul had to tap out because, well, my creation was just tooooo spicy for his taste buds to handle! But hold on, that's the secret ingredient: the fiery kick that sets mouths ablaze in the best way possible. Consider this dish officially inducted into my culinary ninjutsu  – because who needs bland when you can feel alive with flavor.
