The Citrus Enigma: A Flavorful Question Arises
Today, we're diving deep into the world of food science; my curiosity led me to the captivating realm of ceviche, that zesty dish that tantalizes our taste buds with the magic of citrus. But wait! Have you ever wondered if you could swap out those vibrant lemons, limes, and oranges with their powdered counterparts? Well, that's exactly what I wanted to explore using the scientific method.

The Question: Can I cure proteins with True Lime to create the same result as using a fresh lime?

The Hypothesis: If I follow the citric acid-to-citrus ratio instructions on the packaging using the conversation ratio, then I will be able to duplicate a lime because the citric acid powder is just as acidic.

My Predictions: This experiment will be a triumph but will require extra effort. The ceviche cured with True Lime will need more time to cure the proteins to get them to the perfect texture, whereas the genuine lime's touch will work more swiftly.

INGREDIENTS

8oz firm white fish ( cod, mahi, halibut, grouper, snapper)

1 Tsp True Lime

2 radishes, thinly sliced
-
1.5 cups of ice water

a pinch of salt
-
1 serrano pepper, thinly sliced

1/2 red onion, thinly sliced
-
2 cloves of garlic
-
1/2 bunch of cilantro
-
1 cup of watermelon

Let's get COOKing!

Slice your red onion and radishes, then place them in a bowl with 1 to 2 cups ice water. The ice water will take the bite out of the red onions, help them hold a crunch, and flavor the water for the ceviche. Let this sit for at least 5 minutes.

Cut your fish into 1/2-inch chunks and place them in a bowl.

Add the serranos, red onions, radishes, garlic, salt, True Lime, and 2 tbs of the onion water to that bowl.

Mix well and let it sit for 30-50 min until you reach the desired texture of your fish.

After your allotted time, add the cilantro and watermelon and mix well again.
